A Sweet Potato Recipe - Easy and Delicious

sweet potatoes

 

 

 

The below sweet potato recipe is easy and delicious.  I love sweet potatoes, and if you do, you will love this recipe.  My family loves it.....and so will you.

 

 

 

Sweet Potato Crunch w/Pecans

 

5-6  sweet potatoes, cooked and then peeled

(I boil the potatoes, let them cool, and the peelng comes off very easy.)

¼ to ½ cup white sugar

½ tsp. salt

2 eggs, beaten

1/3 cup milk

½ cup butter

1 Tblsp vanilla

 

Mix all above ingredients by hand, or hand mixer

Grease a 13x9 casserole dish. Add above mixture.

 

In a small bowl, mix:

1 cup brown sugar

1/3 cup melted butter

1 cup chopped pecans

¼ cup of flour

This should be dry enough to crumble or sprinkle on top of sweet potato mixture.

 

Bake at 350 for 25-30 minutes (until bubbly)

I love pecans! I typically have sweet potatoes with brown sugar or marshmallows, but this recipe might be substituted in to this year's meal

Heather....try it...you will love it.  And, it is so easy.  I usually boil my sweet potatoes, let them cool somewhat so the peeling comes off easy.

I love sweet potatoes and this sounds really delicious!  I'm used to eating mine plain like a baked potato, so for me this sounds like a dessert!
